What are the average waits for most of the rides? I've only been once, and I don't remember how long most rides' waits were.

Depending on when you go...I haven't been during the cedar UNfair days but I know in the prestine paramount days on sundays there was generally no wait at all on everything and rerides all day long!

I usually only go for 2 hours on Saturday mornings but most everything is 15-30 minutes with the except of Borg which is usually up to an hour (why?).

After about Noon on Saturdays lines start getting longer and I hit the road...or hit Wild Wings.

What days should I avoid and what things should I do despite if they have long lines?

Saturday Afternoons i suppose. Borg apparently has the longest line of the coasters because of slow loading times and its in the very front of the park. Plus the GP think its amazing since its a flying coaster.
