Also, mack investing in carowinds? Wouldn't it be the other way around?

I was thinking the same thing, however if Mack were to "invest" in Carowinds...
Europa Park has some nice theming.

I wouldn't expect so, or at least not in the immediate future. I'd personally love to see it happen, but no major Mack coasters have been built in the United States recently, so it's pretty unlikely.

Depends what you consider major, Mack doesn't normally build major coasters. I see 3 I would consider major, Manta SeaWorld San Diego, Journey to Altantis(SeaWorld Orlando and San Diego).

I know it's under construction but what about Cobra's Curse? And while it's not really a major coaster, Knott's Berry Farm got Coast Rider, so it's not as unlikely as you might think.

yeah, a coaster like Cobras Curse would be GREAT for Carowinds. you can even name it Blackbeards Reve . . . oh wait.
