If we can get the three parks done on Sunday (not doing Epcot this time), then we will do the two Universal parks on Monday. We have a 4 year old with us, so I don't see that happening. It looks like two days of Disney.

Any pointers? How bad are the lines on a Sunday in May? I'm hoping everyone is driving/flying home and they're not too bad? Wishful thinking?

I went in june and did everything in each park each day and sometimes multi times. Most people come during the day time and around 3-4 the crowds seemed to die down. I would def do magic kingdom and animal kingdom first. hollywood studios doesnt seem really kid friendly to me due to the lack of kids attractions though...

I highly encourage you to spend a lot of time at a particular park and pay attention to the detail. If you slow down and look at all the detail crammed into the Disney parks, you'll find that the parks really aren't just for kids.

Magic Kingdom gets really crowded at night - that's when the fireworks and light parades begin. The morning and afternoon are your best bet to beat the lines.
Tony's is a great place to eat with a kid - it's themed to the restaurant in Lady And The Tramp. If one of you is having a birthday, don't forget to mention it to the waiters at Tony's. You'll be in for a treat!

Animal Kingdom is a less-popular park compared to Epcot and Magic Kingdom. You'll find that there are less crowds in the morning and around lunch time.
Go to the Lion King show with your kid. Both of you will fall in love with the performance.

Hollywood studios isn't the best place to take your kid, but you will definitely love it. Keep this park in mind when he gets older!
Epcot is my personal favorite park. You won't want to miss the fireworks show - it's spectacular. There are a few things that your kid will enjoy, but this park is mainly for sci-fi lovers and technology enthusiasts to put it simply. Fantastic and beautiful park.

Magic Kingdom in May on a Sunday afternoon - busy. Not as busy as Saturday afternoon, but you should still expect some large crowds. My advice to you is go very early when the park opens and try to experience a lot of rides before the crowds take over. Then I'd go to Animal Kingdom and walk around - your kid will love the animals. If you have time, maybe try to stop by Epcot. End the day with fireworks from either Magic Kingdom or Epcot (preferably Epcot).

I can't stress enough the excitement of studying the detail in each of these parks. You will be surprised at how much there is, I can guarantee you that!

My last time in Florida was during an October trip. Hardly anyone was at Universal but everyone seemed to be hanging out next door in Islands of Adventure. We did both parks in one day, seeing many attractions multiple times at Universal, but longer lines awaited us at Islands. Because of the unexpected double park day, we gain a free day during the vacation.

We did Disney World that same weekend, thinking no one would be there. Boy, were we ever fooled. Everyone and their brothers were there and we were told DW stays crowded. I don't know if it was because of the end of the year or not but Disney was running a special at the time. They invited us to turn our one-day pass into a three-day pass for only 50 cents more per ticket, to return to the same attraction or visit different Disney parks.

Please keep in mind for October theme park travels:
Around 5 or 6 o'clock we were told the parks were closed because they were switching over to their Halloween celebrations. Both Islands and Disney World closed early because their Halloween celebrations were on a different ticket. I didn't know about this before hand and was not ready to leave the parks when they closed on us. Now we know.

We have a whole day set aside for Magic Kingdom. With that said, is it possible to do all of this and still take a 2 or 3 hour lunch break on the 2nd day if we utilize the fastpass and single rider lines? Is there anything I should add or take away?

Another one not to miss at MGM, er, Hollywood Studios is the Muppet show - very well done.

At Epcot, be sure to do the Turtle Talk with Crush at Seas. Funny show especially for the kids, and pretty impressive from a technical standpoint for what it is.
